Scientific name Physalacriacea.
Enoki grows best from the middle of Autumn till the middle of Spring. Generally available from April to October.
The commercial product of Enoki in the world has always been very long stalks. Reducing oxygen and a darker environment will stimulate the growth of long stipes (stems) and produce a lighter colour of bronze caps.
An easy way to grow long stalks is to cut the bottom of a 2-litre bottle off and cover the growing area with the bottle (remove the lid of the bottle). The CO² becomes higher than the O². The mushrooms are going to try to get the O² in the top area which thus results in long stipes (stalks).
The stipes can grow to 10 to 12cm in height by using the bottle method.
The best time to grow Enoki is in the colder months (from May) when there is a difference in day and night temperatures of nearly 10 degrees. These are perfect conditions to grow Enoki and will stimulate the pins to start growing even it is not fully colonization.
It is well known for its role in Japanese cuisine.
